Crawfish’s sweet, tender meat made them a great choice for a bevy of applications. Today, Crawfish dishes have spread across the country. 										<content:encoded><![CDATA[<p>Are you looking for the perfect seafood tapas addition? Marinated White Anchovies are this week’s featured special of the week.  Also known as “boquerones,” White Anchovies are caught in the Mediterranean.  Anchovies fished in the Mediterranean (as opposed to the Atlantic are often said to be more delicate in flavor). The Anchovies are then gutted and filleted to ensure perfect quality and presentation.  They are then marinated for twelve hours in vinegar which gently “cooks” the fish without heat.  Once they are removed the marinated, two things have happened; they turn an appetizing and attractive white color and they have an irresistible savory meets sweet flavor.</p>
<p>Boquerones are provided oil marinated in 1 kilo units (2.2 lbs) and are on special for the remainder of August for just $19.50/unit.  When we taste them at Samuels, we love them a top of fresh bread, tossed in a salad, a garnish for traditional Mediterranean style deviled eggs, or enjoyed as is.</p>

Great cooked or crudo, Madai skin is edible, which makes the fish a great option for grilling or frying whole. Pan searing is another great option, but crudo applications are still the most popular.
