Mild, fresh flavor with medium-firm texture. Medium fat content. Raw crab is green/blue then turns bright red when cooked.

Softshells offer a crunchy texture, since they are eaten shell and all. Cooked shells of blue crabs turn orange-red. Body meat is white, tender and flaky. Claw meat has a natural brownish tint.
Soft shell crabs are perfect sauteed or fried.
