Atlantic cod fillets have a silvery, subcutaneous layer that sets them apart from Pacific cod. The lean meat offers a mild, clean
flavor with large, tender flakes. It is less firm than haddock and sweeter than Pacific cod. When raw, Atlantic cod appears translucent,
ranging from white to pinkish, while cooked, it turns an opaque white.
